Crispy panko-breaded walleye fillets, drizzled with a delicious sweet Thai chili sauce and a touch of lime crema. This recipe works equally great with other types of fish, but walleye is my personal favorite.

Ingredients

  • 8 Walleye fillets

  • 2 cups Panko bread crumbs

  • 3 Eggs, beaten

  • 1/2 cup All-purpose flour

  • 1/2 teaspoon Salt

  • 1/2 teaspoon Garlic powder

  • 1/2 teaspoon Cayenne pepper

  • 1/2 teaspoon Paprika

  • Green onions, chopped

  • Sweet Chili Sauce
  • 1 Tablespoon Sambal oelek

  • 1 teaspoon Garlic, grated

  • 1 teaspoon Ginger, grated

  • 1 teaspoon Soy sauce

  • 1 Tablespoon Rice cooking wine (like Shaoxing)

  • 1/2 cup Rice vinegar

  • 1/3 cup Sugar

  • 2 teaspoons Cornstarch

  • 2 teaspoons Water

  • Lime Crema
  • 1 cup Sour cream (8 ounces)

  • Juice from 1 lime

  • 1/4 teaspoon Salt

Directions

  • Prepare walleye fillets by patting them dry with paper towels.
  • Mix the flour with salt, garlic powder, cayenne pepper, and paprika.
  • Heat 1-2 inches of vegetable oil to 350 degrees Fahrenheit in a deep skillet.
  • Dust each walleye fillet with the seasoned flour. Then dip into egg bath, and let excess egg drain off. Finally, coat thoroughly with panko on all sides.
  • Carefully fry each breaded fillet in the hot oil. Take care not to over-crowd the pan. Do this step in batches. Once the bottom of each fillet is golden brown, turn the fillet over and cook for another couple minutes until that side is golden brown.
  • Remove each cooked fillet from the oil and set on a wire rack until ready to plate.
  • Plate by drizzling sweet chili sauce all over the breaded fillets. Then do a lighter drizzle of some of the crema. Finally, garnish generously with chopped green onion.
  • Sweet Chili Sauce
  • Combine the Sambal oelek, garlic, ginger, soy sauce, wine, rice vinegar, sugar, and 1/3 cup water in a saucepan.
  • Bring it to a simmer over medium heat, stirring frequently.
  • Stir the cornstarch into 2 teaspoons of cold water to make a slurry.
  • Turn off the heat and stir the slurry into the saucepan. Let the sauce cool completely, and then refrigerate until ready to use.
  • Lime Crema
  • Whisk together the sour cream, lime juice, and salt. Refrigerate until ready to use.
