Ingredients

  • 5 Regular bratwurst sausages (like Johnsonville)

  • 2 Large yellow onions

  • 12-24 oz Beer

  • 4 Tablespoons Butter

  • 1/2 teaspoon Kosher salt

  • Brat Buns

  • Mustard

Directions

  • Cut the onions in half, and then into slices (along the grain).
  • Melt butter in large skillet over medium heat. Add onions and sprinkle salt over top. Cook the onions down until they are beginning to turn light brown, stirring them occasionally. Most of the liquid that releases from the onions should be cooked off.
  • Place the bratwursts into the skillet, atop the cooked onions. Then pour in enough beer so the brats are submerged halfway. Bring the beer up to a low simmer, and let the brats cook. Turn the brats over halfway through, and continue cooking until they reach an internal temperature of 165 Fahrenheit.
  • Remove brats from skillet and set aside. Turn stove up to medium-high heat, to cook off most of the remaining beer. Stir the onions every couple minutes so they do not burn. Once most of the liquid is reduced in the pan, turn off the heat.
  • Heat a propane or charcoal grill up over medium heat. Then grill the brats for a few minutes on each side, until they develop some nice color all over.
  • While the brats are grilling, toast the buns on the grill or in a toaster oven.
  • To assemble, lay down a generous serving of the braised onions on the bun, followed by a bratwurst. Then optionally top with some mustard.
