Homemade American Cheese

Make your very own American cheese at home! This ultra-melty and creamy cheese is perfect for cooking on burgers or in grilled cheese sandwiches. This recipe works great for classic Kraft-style American cheese, but also works very well for other varieties such as Swiss-style – just substitute the cheddar and Colby for other cheeses like Swiss, Muenster, or whatever you like.

Ingredients

  • 350 grams Yellow cheddar cheese (about 3/4 pound)

  • 350 grams Colby cheese (about 3/4 pound)

  • 1 stick Butter (4 oz)

  • 300 grams Heavy cream (about 1 1/2 cups)

  • 20 grams Sodium Citrate granules (about 4 teaspoons)

Directions

  • Shred all the cheese with a standard box grater. Alternatively, you could cut the cheese up into tiny pieces.
  • In a large saucepan, melt butter on medium-low heat.
  • Stir in the heavy cream, and cook for a minute to get the mixture heated back up.
  • Whisk in the sodium citrate, and cook another minute.
  • Gradually add in the shredded cheese, stirring or whisking constantly. Add a handful at a time, and allow it to melt in while stirring. Then add another handful, and repeat until all the cheese is added. Keep heat on medium. You want the mixture hot, but not bubbling and spattering.
  • Optional step: Blend the melted mixture with an immersion blender. This may help it become even more smooth, but is not a required step.
  • Pour hot mixture into your mold (greased baking sheet, greased silicone mold, or similar).
  • Place in refrigerator until cheese solidifies and is cool to the touch (2-4 hours).
  • When cool, your cheese is ready to slice and enjoy.
