Ingredients

  • 5 lbs Yukon Gold potatoes

  • 1 Tablespoon Fresh thyme leaves

  • 3 Tablespoons Fresh parsley, chopped

  • Olive oil

  • Salt

  • Black pepper

Directions

  • Cut potatoes into cubes that are about 1 1/2 inches in size. Place cubes into pot of cold water as you go, to keep them from turning brown.
  • Add a big pinch of salt to the pot, and bring to a boil over high heat. Boil for a few minutes until potatoes are softened, but not mushy. About 10-12 minutes.
  • Strain the potatoes, and put them in a bowl or tray. Let them sit a few minutes so most of the excess water can evaporate off.
  • Drizzle a few Tablespoons of olive oil all over the potatoes. It should be enough to lightly coat all the potatoes in oil, but not so much that there is standing oil at the bottom of the bowl/tray.
  • Sprinkle over a big pinch of salt and pepper, as well as the thyme and parsley. Mix everything together to get the potatoes all coated in everything.
  • Spread potatoes evenly across a baking sheet. Roast at 450 degrees Fahrenheit for 30-40 minutes, or until the potatoes have become lightly brown and crispy.
