Using authentic Puy lentils and seasoned with Herbs de Provence, this recipe is sure to please lentil lovers.

Ingredients

  • 1 tablespoon olive oil

  • 3 strips bacon, chopped

  • 2 cups yellow onion, finely chopped

  • 1/4 cups celery, finely chopped

  • 1 1/2 cups carrots, chopped

  • 3 cloves garlic, minced

  • 14 1/2 oz can petite diced tomatoes

  • 6 cups chicken broth

  • 1 cups French Puy lentils

  • 2 teaspoons Herbs de Provence

  • 1 teaspoon Kosher salt

  • 1/4 teaspoon ground black pepper

  • Fresh parsley, chopped

Directions

  • In a medium stock pot, fry bacon pieces on medium heat until just short of crispy.
  • Add the olive oil, followed by the onions, carrots, celery, and garlic. Saute until onions are translucent but not brown.
  • Add the tomatoes, chicken broth, dry lentils, salt, pepper, and Herbs de Provence. Bring just to a boil, and reduce heat to low. Cook everything on a low simmer for 45 minutes, stirring occasionally.
  • Carefully remove 2 cups of the soup and blend it, either with an immersion blender or standard blender. Pour puree back into soup pot and stir.
  • Serve. Garnish with a pinch of fresh parsley.
