Coffee. Bacon. Jam. Individually, we know them and we love them. But together, they form the most magnificent condiment spread known to man or nature. And today in the Great Lakes Kitchen, I’m showing you my recipe and process for making the most delicious coffee bacon jam I’ve ever tasted.

Ingredients

  • 1 Lb thick cut bacon, chopped into small pieces

  • 2 medium yellow onions, chopped

  • 1/2 cup brown sugar

  • 1/2 cup strong coffee (brewed)

  • 1/4 cup maple syrup

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon dry thyme

  • 1/2 teaspoon red pepper flakes

  • 2 Tablespoons balsamic vinegar

Directions

  • Cook bacon pieces in skillet for about 10 minutes on medium heat. Bacon should be tender and just short of crispy.
  • Remove bacon from skillet. Remove all but 1 Tablespoon of bacon fat from skillet. Cook onions on medium-low heat until caramelized (about 20 minutes). Add a small amount of the coffee if pan gets too dry.
  • Add bacon back to the skillet. Stir in remaining ingredients. Bring everything up to a boil before reducing heat to a simmer. Simmer on very low for 1 to 1.5 hours, or until almost all liquid is cooked out.
  • Optionally, you can puree the mixture with an immersion blender or food processor if you want the jam very smooth.
  • Serve. Store in refrigerator for up to 1 week in an airtight container.
