Ingredients

  • 1 cup Whole milk

  • 6.75 grams Active dry yeast

  • 24 grams White sugar

  • 1/4 cup Butter, sliced (room temperature)

  • 6 grams Salt

  • 2 grams Diastatic malt powder

  • 390 grams Bread flour

Directions

  • Heat milk to a temperature between 100 and 110 degrees Fahrenheit (either in microwave or on the stove).
  • In the bowl of a stand mixer, combine milk, yeast, and 1/2 of the white sugar (12 grams). Let the yeast begin to bloom (5-10 minutes).
  • To the bowl, add the rest of the sugar, 1 egg, butter, salt, diastatic malt powder, and about half of the flour. With the dough hook attachment, mix on medium-low speed for 1 minute.
  • Add the rest of the flour and mix on medium-low speed for 6 more minutes.
  • Turn dough out onto a lightly floured surface. Form into a tight ball, and drop into a lightly-greased bowl. Cover bowl with plastic wrap. Let dough rise for 1 hour, until about doubled in size.
  • Turn dough out onto lightly floured surface once again. Punch it down to degas. Cut the dough into 15 pieces that each weigh about 48 grams.
  • Take each small piece of dough and form it into a tight ball. Tuck the sides underneath, and gently pinch/twist, and roll on the counter to seal up the seams.
  • Arrange the 15 dough balls in a 9×13 baking dish, such that there are 3 rows of 5. Then spray a sheet of plastic wrap with cooking spray, and cover the baking dish. Leave alone for 1 more hour to rise again.
  • Combine 1 egg with 1 Tablespoon of water and beat with a fork. Brush a light layer of egg wash atop all of the risen dough balls.
  • Bake in an oven that’s preheated to 350 degrees Fahrenheit for 20-25 minutes. The tops should be golden brown, and the internal temperature of the rolls should be between 190-200 degrees.
  • Optionally brush the tops with some melted butter while the rolls are still hot.
  • Once cool enough to handle, transfer the rolls to a wire rack to finish cooling (or serve while still warm).
