Ingredients

  • 1lb ground sirloin beef

  • 1 large green bell pepper, chopped

  • 1 cup finely chopped onion

  • 2 cloves minced garlic

  • 1 (29 ounce) can diced tomatoes

  • 1 (15 ounce) can tomato sauce

  • 1 (14 ounce) can beef broth

  • 1/4 teaspoon dry thyme

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 cup dry white rice

Directions

  • Brown ground beef in medium-sized stock pot. Drain excess fat.
  • Add green pepper, onion, and garlic. Sauté until onions begin to turn translucent.
  • Add tomato sauce, diced tomatoes, beef broth, thyme, salt, and pepper. Stir thoroughly, and then cover. Cook on a low simmer for 45 minutes.
  • Cook rice, using either rice cooking machine or a saucepan on the stovetop. For stovetop, boil 2 cups of water and then add dry rice. Cover and cook on lowest heat for 20 minutes.
  • When rice is cooked and soup has simmered for 45 minutes, add rice to stock pot. Stir thoroughly and serve.
