This is my take on Panera’s famous broccoli and cheese soup, so I guess that makes it a “copycat recipe”. I hope you enjoy!

Ingredients

  • 1/4 cup butter

  • 1 cup finely chopped onion

  • 1/4 cup flour

  • 2 cups half-and-half

  • 2 cups chicken broth

  • 3 cups chopped broccoli

  • 1 cup julienne/matchstick carrot

  • 2 cups shredded sharp cheddar cheese

  • 1/4 teaspoon nutmeg

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

Directions

  • Melt butter in small stock pot or large saucepan. Saute onions in melted butter until translucent.
  • Sprinkle flour in and stir. Let cook over medium heat for 2 minutes.
  • Gradually whisk in the half & half, a little at a time. Allow to thicken slightly before adding more. Whisk constantly.
  • Stir in chicken broth.
  • Add broccoli and carrots. Cook over low heat for 25 minutes, stirring regularly.
  • Add salt and pepper.
  • Remove 1 cup of mixture from pot and blend (with standard or immersion blender). Then return to pot.
  • Add cheese and cook for 5 more minutes, stirring frequently.
  • Stir in nutmeg.
  • Serve.
