Ingredients

  • 2 cups Plain Greek yogurt (full fat works best)

  • 1 cup English cucumber, coarsely-grated

  • 1 Tablespoon Lemon juice, fresh-squeezed

  • 1 Tablespoon Extra virgin olive oil

  • 3 cloves Garlic, finely-grated

  • 2 Tablespoons Fresh dill, minced

  • 2 teaspoons Kosher salt

Directions

  • Mix 1 teaspoon of Kosher salt into the shredded cucumber. The salt will pull moisture out of the cucumber. Place in a strainer and allow to drain for 20 minutes.
  • Combine all ingredients (including the other 1 teaspoon of Kosher salt). Stir together very thoroughly.
  • Cover and refrigerate for at least 30 minutes before serving.
