Ingredients

  • Baby white potatoes

  • 1 cup Olive oil

  • 2 Tablespoons Lemon juice

  • 1 teaspoon Kosher salt

  • 1 teaspoon Garlic powder

  • 1 teaspoon Onion powder

  • 1 teaspoon Dry rosemary powder

  • 1 teaspoon Red pepper flakes

Directions

  • Place the baby potatoes in a pot of cold water, and bring to a boil over high heat. Boil for 5-8 minutes, or until they are just tender enough to push a wooden skewer through without splitting them.
  • Strain out the water and allow the potatoes to cool and dry in the pot for a few minutes.
  • Soak wooden skewers in water for 30 minutes.
  • Combine the olive oil, lemon juice, and all dry seasonings to make the marinade. Then pour over the potatoes and toss to coat them all over. Let marinate for between 30 minutes and 4 hours (depending on how much time you have).
  • Stick the potatoes onto wooden skewers, taking care not to split the potatoes.
  • Place the skewers directly on grill grates over medium flame.
  • Continue cooking the potatoes, turning them every 3-5 minutes. Optionally brush on more marinade each time you turn them (but use a small amount, as dripping marinade will cause big flare-ups).
  • Once the potatoes have developed some nice color and a little char, remove them from grill.
  • Optionally sprinkle with some more coarse salt when serving.
