Ingredients

  • Onion Rings
  • 2 White onions

  • 1/2 cup Cornstarch

  • 1 cup All-purpose flour

  • 1 teaspoon Onion powder

  • 1 teaspoon Garlic powder

  • 1 teaspoon Salt

  • 1 teaspoon White pepper

  • 1 Egg, beaten

  • 1 cup Club soda

  • Oil for frying (such as vegetable or canola oil)

  • Extra Salt (for seasoning after frying)

  • Signature Sauce Copycat
  • 1 cup Mayonnaise

  • 1/4 cup Buttermilk

  • 1/4 cup Grated Parmesan cheese

  • 1 teaspoon Garlic powder

  • 1/2 teaspoon Onion powder

  • 1 teaspoon Dry chives (ground into granules)

  • 1/4 teaspoon Mustard powder

  • 1/4 teaspoon Ancho chili powder

  • 1 teaspoon White sugar

  • 2 teaspoons Brine from jar of pickled jalapenos

  • 1 teaspoon Lemon juice

Directions

  • Onion Rings
  • Get vegetable oil heating up in electric deep-fryer or a large frying pot. The oil should be several inches deep, so the rings can be completely submerged. Heat oil to between 350-375 degrees Fahrenheit.
  • Peel onions and cut into medium-thin slices. They should not be super thick. Separate the slices into individual rings.
  • In a large bowl, toss each ring with cornstarch. Rings should be thoroughly dusted, but shake off any excess that can fall off.
  • Make batter by combining flour, all seasonings, the egg, and the club soda. Whisk thoroughly until smooth.
  • Dredge the dusted onion rings in batter, and immediately deep-fry. Only fry a few rings at a time, as to not over-crowd the pot. Fry for a couple minutes, until lightly golden brown. They should not be left in the oil long enough to turn a deep, dark brown.
  • Transfer the fried onion rings to a wire rack, and sprinkle with some salt immediately.
  • Repeat the dredging and frying steps with the remaining onion rings.

  • Combine all ingredients and thoroughly whisk until fully incorporated. Cover and refrigerate until ready to use.
