Ingredients

  • Yukon Gold potatoes

  • Olive Oil

  • BBQ Seasoning Rub

Directions

  • Peel the potatoes and cut into thick slices (somewhere between 1/4 and 1/2 inch thick).
  • Place potato slices in a pot with water. Then bring the pot to a boil over high heat. Boil for 5-8 minutes.
  • Strain the water from the potatoes, and let the potatoes dry in the hot pan for a few minutes.
  • Lay all the potato slices out on a wire rack or baking sheet. Then brush lightly with olive oil.
  • Generously season the slices with your favorite BBQ rub (or just use some salt, pepper, garlic powder, onion, powder, and paprika).
  • Turn every slice over so you can oil and season the other side.
  • Pre-heat grill to medium heat, and place potato slices directly on grill grates. Close the grill lid.
  • Turn the slices every 3 minutes, and remove them once they’ve gotten some nice color and grill marks all over.
  • Optionally serve with some sour cream and fresh chives.
