Ingredients

  • 8 lbs Apples (Fuji or Golden Delicious work great)

  • 4 cups Plain apple cider (or just use water)

  • 3 cups White sugar

  • 3 cups Brown sugar

  • 4 teaspoons Cinnamon

  • 1/2 teaspoon Ground cloves

  • 1/2 teaspoon Allspice

  • 1/2 cup Lemon juice

Directions

  • Peel and core the apples. Cut them into slices or small chunks.
  • Add prepared apples and the apple cider to a pot. Cook at a low simmer until apples are very soft.
  • Stir in all remaining ingredients. Using a countertop blender or immersion blender, thoroughly puree the mixture. Do this in smaller batches if necessary.
  • Return all of the puree to the pot. Cook at a very low simmer for about 3 hours, until the mixture is thick enough to mound up on a spoon without running off.
  • While still hot, ladle apple butter into sanitized pint jars, leaving 1/4 inch of headspace.
  • De-bubble jars, wipe the rims. Process the jars in water bath canner for 15 minutes (adjusting for high altitude if necessary).
