Ingredients

  • 2 cups All-purpose flour

  • 1 Tablespoon Baking powder

  • 1 teaspoon Baking soda

  • 1 teaspoon Salt

  • 1/2 cup Butter (cold)

  • 3/4 cup Whole milk or buttermilk

Directions

  • Put butter in the freezer for about 10 minutes.
  • Preheat oven to 375 degrees Fahrenheit (400 degrees if baking from frozen)
  • Mix dry ingredients together in a large bowl with a fork. Then place the bowl into the freezer for a few minutes.
  • Shred the butter with a box grater (or cut into very small cubes if you don’t have a grater).
  • Work butter into dry mix with pastry cutter or fingers. Fingers work best.
  • Add milk and loosely stir with fork until dough can stick together.
  • On floured surface, form dough together and press into a rectangle. Sprinkle a little extra flour if too wet to handle.
  • Fold dough in half, and press out into a rectangle again. Repeat until dough has been folded 3 times. Flatten dough out until it’s between about 1/2 and 3/4 inch thick.
  • Using round cookie cutter, can, or cup, cut out biscuits. Press the cutter straight down; don’t twist. After cutting as many biscuits as you can (probably 2), form the extra dough back together, flatten out, and cut more biscuits (probably 2 more).
  • Place on greased cookie sheet and bake for 15 minutes, or until golden brown (25-30 minutes if baking from frozen).

Notes

  • If you intend to make freezer biscuits for later use, simply take the uncooked biscuits and lay them out on a parchment-lined cookie sheet and flash freeze in the freezer for 2 hours. Then package up the biscuits in freezer bags or vacuum-seal bags, and put back in the freezer until ready to use.
  • When baking freezer biscuits, cook them directly from frozen. Just place on baking sheet or cast iron skillet, and cook for 30 minutes at 400 degrees Fahrenheit.
  • This recipe is for a small batch of about 4 biscuits. Feel free to double or triple the recipe as needed.
