Ingredients

  • 4 Russet potatoes

  • Fine grain salt

  • Frying oil (such as vegetable or canola)

  • Optional Seasoned Salt
  • 2 teaspoons Fine grain salt

  • 2 teaspoons Onion powder

  • 2 teaspoons Garlic powder

  • 2 teaspoons Smoked paprika

  • 1/2 teaspoon Black pepper

  • 1/4 teaspoon Cayenne pepper

Directions

  • Peel the potatoes (or if you prefer skin-on fries, skip this step).
  • Using a French fry cutting machine or a sharp knife, cut the potatoes into thin French fries.
  • Submerge raw fries in cold water and let them soak for at least 60 minutes (90 minutes or 2 hours would be ideal).
  • Remove fries from water and pat them very dry with towels.
  • In an electric deep-fryer or large fry pot, heat vegetable oil to 325 degrees.
  • Cook the raw fries in the oil for 5-6 minutes, and then remove them from the oil. Don’t over-crowd the fryer or pot, as this can risk a boil-over and also bring the oil temperature down too much. Cook the fries in 2 or more batches.
  • Remove the fries from the oil and set on a wire rack to drip and cool for a few minutes.
  • Then heat the oil up to 360 degrees. Once the oil is at 360 degrees, fry the potatoes for a second time. Cook them until they are a rich golden brown color.
  • Place the cooked fries on a wire rack and season immediately (either with fine salt, or the seasoned salt mixture).
